Hi, Emma! I'm so glad you enjoy this Lemon Loaf recipe! if the loaf isn't rising, it could be a couple things. You may try checking the internal temperature of your oven. If you don't have an oven thermometer, you can usually get one at the grocery store or on Amazon for around $5.00. It could also be that the baking powder used is out of date. If you don't bake frequently, it takes a really long time to go through baking powder. Could contribute to the loaf being flatter than expected. Hope this helps! Hi! First, I would check your leavening and consider getting a fresh can. If you don't already have an internal oven thermometer, I'd also consider getting one as your oven may be fluctuating and baking the outside before the inside is fully done (hence the sinking).

Hey Julie, one reason that it may be sinking is due to the oven itself. I had that exact problem before and after cleaning it my oven it worked perfectly. I found out Sank because it wasn't able to fully cook as intended as the oven didn't get as hot causing the load to be slightly under baked.

This was easy to bake and tastes so much like the Starbucks version! I used zest instead of the extract and it still has a nice lemony flavor.

Absolutely perfect! Yummmmm I love baking this refreshing loaf of goodness. I make it regularly throughout the year, I don’t change anything. The only thing, and it’s a matter of preference, is I drizzle the glaze instead of coat the loaf.

I think i may have left a comment already regarding this recipe, so if this is a duplicate, i apologize, i am old. ok. so here is what happened. I was very, very excited to try this recipe.As so many other before me, i have tried many different dup starbucks and none are very good, or very close to the original. As i began this recipe, i realized too late that i did not have ap flour. I only had gluten free, but it is the one-to-one king arthur, so i felt secure in my baking. Well, the cake came out amazing, and the lemon frosting was spot on. That being said, i would not use gluten free flour again. I felt that the cake was to damp and moist. It almost felt underdone and raw. But the taste was amazing. I will be using this recipe again using the recipe exactly as written. Thank you again for a wonderful recipe.

Hello, when i tried this recipe for the first time it came out perfect but the few last times my lemon loaf tend to sink in the middle for no apparent reason i follow all the instructions one by one, what might be the reason?
